𼊠The art of âcarryoverâ cookingâŚ
Most home cooks (and even a lot of firehouse cooks) forget that food keeps cooking even after itâs off the heat. This is called carryover cooking, and understanding it can take your meals from âgoodâ to âincredibleâ.
When you pull a steak off the grill at 130°F, the internal temp will continue to rise at least 5â10 degrees as the juices redistribute. Same thing with chicken, roasts, even casseroles coming out of the oven. Thatâs why pros always rest their proteins and pull them a little early instead of waiting for the thermometer to hit the âfinalâ number. *I use a wireless meat thermometer called the Meater đ it syncs with your phone and tracks both internal temp and ambient heat so you can nail perfect doneness every time without stressing about when to take it off the heat.
In the fire service, this lesson is gold because we often get yanked away mid-cook by a call. Learning to anticipate carryover cooking means fewer dry chicken breasts and overdone roasts when you get back. It also gives you a margin of safety - you can rest food under foil, and itâll finish gently while staying juicy.
For your crew, this is a leadership lesson too: donât judge success by the heat of the moment. Sometimes the best results come from patience, trust in the process, and letting things settle before diving in.

đĽ Kitchen Tool of The Week đĽ
An oil sprayer is one of the simplest kitchen upgrades that pays off big in both health and savings. Instead of pouring oil straight from the bottle (where itâs easy to use more than you realize) this sprayer mists a thin, even layer across your pan or food, giving you the same flavor and non-stick benefits with a fraction of the calories. Over time, this cuts down on unnecessary fat intake while keeping meals lighter and more balanced. Plus, since youâre stretching each bottle of oil much further, youâll be making fewer trips to the store and saving money in the long run.

đĽ These Firehouse Birria Tacos are the ultimate crew meal - rich, bold, and built to fuel your family or crew after a long day. Slow-braised beef simmered in a smoky, spiced consommĂŠ shreds into tender perfection, while tortillas dipped in that same broth crisp up with melty Oaxaca cheese inside. Every bite packs layers of flavor, from the tangy cilantro-onion garnish to the lime squeeze that brightens it all up. And the best part? Theyâre not just deliciousâtheyâre balanced too. Each serving is loaded with 60g of protein, giving you a powerhouse of fuel thatâs as satisfying as it is nutritious.

Lead
There are two pains in life. There is the pain of discipline and the pain of disappointment. If you can handle the pain of discipline, then youâll never have to deal with the pain of disappointment.
In his speech, Coach Nick Saban reminds us that toughness isnât just physical, itâs mental and emotional discipline repeated day after day. On the football field, that means showing up prepared, executing the fundamentals, and never letting up when the pressure rises. In the fire service, itâs no different. Toughness is keeping your head clear when tones drop at 2 a.m., pushing through fatigue on the third call of the night, and maintaining calm in the face of chaos so your crew can count on you.
Saban emphasizes that leadership isnât about one or two flashy plays, itâs about the small, consistent details done right. Firefighters know this truth intimately: stretching a clean line, setting up ladders properly, running through a thorough size-up. These may seem like routine tasks, but theyâre the foundation that keeps both our people and our community safe. Leaders in the firehouse set the tone by refusing to cut corners, even when no one is watching.
Finally, Saban speaks to standards. A leaderâs role is not to lower expectations to make things easier but to raise others to meet the standard. For fire service leaders, that means holding crews accountable to training, safety, and professionalism. Itâs not about being harsh, itâs about being consistent and fair so that when the real test comes, everyone knows their role, trusts their training, and has the toughness to execute.
