🥩 The art of ‘carryover’ cooking…

Most home cooks (and even a lot of firehouse cooks) forget that food keeps cooking even after it’s off the heat. This is called carryover cooking, and understanding it can take your meals from “good” to “incredible”.

When you pull a steak off the grill at 130°F, the internal temp will continue to rise at least 5–10 degrees as the juices redistribute. Same thing with chicken, roasts, even casseroles coming out of the oven. That’s why pros always rest their proteins and pull them a little early instead of waiting for the thermometer to hit the “final” number. *I use a wireless meat thermometer called the Meater 👉 it syncs with your phone and tracks both internal temp and ambient heat so you can nail perfect doneness every time without stressing about when to take it off the heat.

In the fire service, this lesson is gold because we often get yanked away mid-cook by a call. Learning to anticipate carryover cooking means fewer dry chicken breasts and overdone roasts when you get back. It also gives you a margin of safety - you can rest food under foil, and it’ll finish gently while staying juicy.

For your crew, this is a leadership lesson too: don’t judge success by the heat of the moment. Sometimes the best results come from patience, trust in the process, and letting things settle before diving in.

These may seem like routine tasks, but they’re the foundation that keeps both our people and our community safe. Leaders in the firehouse set the tone by refusing to cut corners, even when no one is watching.

Finally, Saban speaks to standards. A leader’s role is not to lower expectations to make things easier but to raise others to meet the standard. For fire service leaders, that means holding crews accountable to training, safety, and professionalism. It’s not about being harsh, it’s about being consistent and fair so that when the real test comes, everyone knows their role, trusts their training, and has the toughness to execute.
