🥩 What’s all the hype about reverse sear?

Reverse searing is the secret weapon for the perfect steak, and Memorial Day is the perfect time to showcase it. Instead of slapping your steak straight onto the grill, you’ll start by gently cooking it over indirect heat at 250°F. Think of it like a relaxing spa treatment for your steak, low and slow until it reaches the perfect temperature inside. While it’s cooking, crack open a cold one, get those side dishes in order, and maybe even impress someone with your expert multitasking.

Once your steak is 10-15°F below your desired doneness, it’s time for the sear. Crank up the heat on your grill and sear each side for 1-2 minutes until you get those gorgeous grill marks and a crispy crust. The result? A perfectly juicy steak with a flawless, caramelized exterior. Reverse searing gives you total control, ensuring your steak is cooked just the way you want it.

Lead

Great leaders understand that management and leadership are two sides of the same coin - one provides the structure, and the other gives it purpose

In his article "Rethinking the 'M' Word" Ryan Gaffney challenges the fire service's aversion to the term "management," urging firefighters to reconsider its role in effective leadership. While leadership is often celebrated for its visionary qualities, Gaffney emphasizes that without the organizational structure and foresight provided by management, leadership can falter. He draws parallels to Theodore Roosevelt's assertion that educating the mind without morals is perilous, suggesting that leadership without the grounding of management can lead to chaos.

Gaffney advocates for a balanced approach where leadership and management complement each other. He proposes that firefighters and officers should embrace both roles: leading with vision and purpose, while also managing resources, schedules, and training effectively. By doing so, they can ensure that their teams are well-prepared and supported, leading to improved performance and morale.

Ultimately, Gaffney's message is one of integration and humility. He encourages members of the fire service to shed egos and recognize that true leadership involves both inspiring others and managing the complexities of the job. By embracing both aspects, firefighters can enhance their effectiveness and contribute to a more cohesive and resilient department.
