Ingredients

- 12 oz boneless ham steak

- 12 oz 93% lean ground beef

- 2 medium-sized sweet potatoes

- 2 bell peppers

- 1 yellow onion

- 2 tsp paprika

- 2 tsp garlic powder

- 2 tsp cumin

- 1/4 cup chicken broth

- 1 tsp olive oil

- 8 eggs

- 1 bunch green onions

Instructions

1)  Mise En Place

- Dice the boneless ham steak in ½ inch cubes

- Peel and dice the sweet potatoes, about ½ cubes also

- Dice the bell peppers and yellow onion

- Finely slice the green onions

2) Breakfast Hash

- In a large pan over medium heat, toss in the cubed ham and let warm up and sear

- Remove and set aside

- Add the lean ground beef and season with salt and pepper

- Cook through and then set aside

- Return the same pan to the stovetop over medium heat. Add in the chopped yellow onion and bell peppers. Season with salt and pepper and your favorite seasoning if you’d like

-  Cook until soft, about 3 minutes. Add in the sweet potatoes and season with salt and pepper

- Add ¼ cup chicken broth and cover. Cook for about 8-10 minutes, until the sweet potatoes soften up

- In a large bowl combine the cooked meat and cooked veggies

3) Fried Eggs

- In a frying pan over medium heat, cook your eggs to your liking. Season with salt and pepper

4) Plate & Serve

- Spoon the hash in a bowl. Top with 2 eggs per portion

- Garnish with green onions and your favorite hot sauce

🪓 Cooking Hacks
  • Steam, then crisp. Covering the sweet potatoes with broth softens them fast. Uncover at the end to get those crispy, caramelized edges.

  • Season in stages. Salt the meat, then the veggies, then adjust at the end so every bite is dialed in.

  • Don’t crowd the pan. Too much at once = steaming instead of browning; cook in batches if needed for max flavor.
