👀 This Fat Tip Changed My Cooking—And This Leadership Mindset Changed My Crew

👀 Let’s talk about FAT

Fat makes food taste better by carrying flavor, enhancing aroma, and adding rich texture. It also balances sharp flavors and leaves a lasting, satisfying feel, giving food a sense of indulgence. But, it's the most calorie-dense macronutrient, so calories add up quickly when you use too much of it. Let me show you how you can use less fat while cooking:

✅ Use nonstick pans or air fryers so you need less oil for sautéing or roasting (this non-stick, non-toxic pan from Caraway is my favorite)

✅ Roast or grill instead of frying to get crisp textures without deep fat

✅ Try Greek yogurt, cottage cheese or pureed beans in place of cream or mayo in dressings and sauces (don’t knock it ‘till you try it)

✅ Brush or spray oil instead of pouring it. You need less than you think! (get one of these oil sprayers from Amazon to help with this - I use it daily!)

✅ Boost flavor with herbs, spices, garlic, and acids like lemon or vinegar to make up for the richness fat usually provides.

Small changes add up, keep things delicious, and less caloric 💪

Firehouses have big personalities - bonds forged in smoke and structure, but they also face burnout, burnout… burnout. That’s where psychological safety steps in 👉 the idea that you can speak up, admit mistakes, ask “dumb” questions, and not sweat the consequences. Originally coined by Dr. Amy Edmondson of Harvard, it's the secret sauce that transforms a crew into a powerhouse of communication and trust.

1️⃣ Speak up. Get heard. When firefighters trust they won’t be ridiculed or punished for raising concerns (no matter their rank) they stay motivated and engaged. The opposite? Fear leads to "quiet quitting": doing the minimum just to avoid scrutiny.

2️⃣ Own your errors. Nobody’s perfect, and that’s okay. If mistakes are met with shame, people hide them. But a culture that says, “We messed up, let’s learn,” builds real accountability and spurs growth.

3️⃣ Innovation follows connection. Encouraging questions isn’t just about clarity, it’s a spark for creative solutions to evolving fire service challenges. Teams become more adaptive, more collaborative, more resilient.

  • Bold thinking – Fresh ideas flow freely when asking “What if…?” doesn’t result in mockery.

Building psychological safety isn’t an overnight fix. It's a mindset shift, valuing openness, curiosity, and accountability. But once a crew embodies it, the rewards are massive: stronger trust, innovative thinking, and real loyalty. Make your station a place people want to stay, and your team will be ready for anything.
