Let me guess, you think your knife is “fine”. It still cuts things, right? But if you have to push hard to get through an onion or saw back and forth on a tomato, your knife isn’t working for you… it’s working against you.
A dull knife doesn’t slice cleanly, it crushes. When you crush ingredients, onions release more harsh sulfur compounds (which means more tears and sharper flavor), fresh herbs bruise and blacken faster, and proteins tear instead of portion cleanly. Even garlic suffers. A clean slice keeps flavor balanced and texture intact. A dull blade turns precision into punishment.
Here’s what most people don’t realize: honing and sharpening are different. Honing (with a rod) realigns the edge, think of it like straightening bent teeth on a comb. Sharpening actually removes metal to create a new edge. You should hone regularly (every few uses) and sharpen a few times per year depending on how often you cook. And please, don’t toss your knife loose in a drawer where it bangs into other utensils and dulls instantly.
