Salt is one of the most powerful tools in your kitchen; and when it comes to meat, it’s the difference between good and unforgettable. Salting isn’t just about flavor, it’s about science. When salt hits the surface of meat, it draws out a small amount of moisture, dissolves, and then reabsorbs back into the muscle fibers. During that process, the salt begins to break down tough proteins, tenderizing the meat and helping it retain moisture while it cooks. That’s why properly salted meat isn’t just seasoned on the surface, every bite is juicy, flavorful, and balanced from edge to center.

Timing matters, too. Salting meat at least 30–60 minutes before cooking gives it time to work its way deep into the fibers. For thick cuts or roasts, salting a full day in advance and refrigerating uncovered (a dry brine) creates an even better crust and enhances flavor throughout. And don’t forget your salt choice - kosher salt is ideal for its coarse texture and consistency, while fine table salt can make it too easy to overdo. A solid rule of thumb: use about 1 teaspoon of kosher salt per pound of meat, applied evenly on all sides. It might feel like more than you’re used to, but most home cooks under-season by half, and that’s why their steak tastes flat.

Salt doesn’t just make meat taste salty; it unlocks flavor. It enhances aroma, balances bitterness, and amplifies the natural sweetness of proteins.
